Is anyone on Earth able to cut a mango properly?  I get better with every try, but holy moly, it’s no easy task. The pits are never the same size, which drives me nuts. Thankfully, they taste so heavenly (they’re one of my favourite fruits) that I forget that they took forever to peel. 

Mango is delicious mixed with avocado. I went with shrimp for this recipe because they’re flavourful and pre-cooked, saving me effort.

I tried a lot of sauces for this salad, and every time, all they did was ruin it. The mango juice is a sweet sauce in itself, and with the tart lemon and salty shrimp, it’s PERFECT.

Ingredients

  • 2 ripe mangos, cut into strips
  • 2 avocados, peeled and cut into strips
  • 3/4 lb shrimp, cooked
  • Handful of fresh cilantro, finely chopped
  • Juice of 1/2 lemon
  • 2 tablespoons vegetable oil
  • Salt and pepper, to taste
  • A dash of nut oil of your choosing, for serving (optional)

Steps

  1. In a bowl, combine all the ingredients, aside from the oil.
  2. Season and serve with the nut oil of your choosing.
