One weeknight, Alex was begging me to make him dessert. 

“What would you like, Alex?”
“I kinda want a chocolate cake, but I’d also like some oatmeal cookies… Or maybe your cranberry cookies? Or you could also make something with caramel, that would be good!”

Since I didn’t feel like making the decision for him, I tried to make one dessert that would taste like everything he suggested. I think he asked me to marry him between every bite and to never leave him about 17 times in the hour after he ate it. Hahaha!

Jokes aside, this dessert is sweet and moist and rich and you know, delish.

Ingredients

  • 1/4 cup dark chocolate chips
  • 1/4 cup butterscotch chips
  • 1/4 cup dried cranberries
For the dry ingredients
  • 1 cup flour
  • 2 cups quick rolled oats
  • 1/2 cup powdered almonds
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Pinch of salt
For the wet ingredients
  • 3/4 cup butter, melted
  • 1 cup brown sugar
  • 2 eggs
  • 1/2 teaspoon vanilla extract

Steps

  1. Preheat the oven to 350˚F.
  2. In a bowl, combine all the dry ingredients. Set aside. 
  3. In a large bowl, combine the wet ingredients. Add the dry ingredients and mix well. 
  4. Add the chocolate chips, butterscotch chips, and dried cranberries. Mix well and pour into a 12-inch x 8-inch baking dish.
  5. Bake for 20–25 minutes.
