Here are a few garnish ideas for mini Yule logs made for two people. Go ahead and let your creativity run wild with whatever you have laying around the house to decorate the logs as you see fit.

Ingredients

Cake
  • 2 cups of all-purpose flour
  • 1 teaspoon of baking powder
  • 3/4 cup of sugar
  • 1/2 teaspoon of salt
  • 1/2 cup of vegetable oil
  • 3 eggs
  • 1 teaspoon of vanilla extract
  • 1 1/4 cup of milk
Pear coulis & Mango coulis
  • 1 cup of pears or mangos, diced
  • 1/2 cup of water
  • 2 tablespoons of corn syrup
  • 1 tablespoon of powdered gelatin, diluted in 2 tbsps of hot water
1st garnish
  • 1/2 cup of dulce de leche
  • 1/3 cup of melted dark chocolate
  • of candy cane pieces, as preferred
2nd garnish
  • 1/2 cup of dulce de leche
  • 1/2 cup of pear coulis
  • Chopped nuts, as preferred
  • Caramel pieces, as preferred
  • Dried pear slices, as preferred
3rd garnish
  • 1/2 cup of raspberry jam
  • 1/2 cup of mango coulis
  • Coconut, as preferred
  • Pomegranate, as preferred

Steps

  1. Preheat the oven to 350°F and place the rack at the center of it.
  2. Line a beveled edge baking sheet with parchment paper, then set aside.

CAKE

  1. Combine the flour, baking powder, sugar and salt in a bowl then dig a small well in the middle. Add the vegetable oil, eggs and vanilla extract then whisk and gradually add in the milk. Stir until smooth.
  2. Pour onto the baking sheet then bake for 15 minutes. Let cool completely (approximately an hour.)

COULIS

  1. Add the pear or mango dices (depending on the chosen recipe), the water and corn syrup to a pot then cook over medium heat for 20 minutes. Add the diluted gelatin, then blend with a handheld mixer into your mix is smooth. Set aside.

ASSEMBLING

  1. Slice the cake three ways, width-wise. Then slice each piece in three equal parts.
  2. Spread dulce de leche onto 2 out of the 3 parts (1st & 2nd garnish option) or raspberry jam (3rd option), then layer the cake slices to make three small yule logs.
  3. Garnish each log with the remaining ingredients in all three garnish options.

Tips & tricks

You can bake the cake in advance then wrap the cooled down pan with a plastic wrap to prevent the cake from drying up. Simply refrigerate the coulis then heat up in the micro-wave when needed.

Can be kept for a day in the refrigerator. Both the cake and coulis can be frozen.
