Promise me you won’t judge until you try it! The sweet and salty combination will surprise you and the people you give the cookies to.

When I saw a plate with chocolate pancakes and a side of bacon I told myself I absolutely had to make bacon & chocolate chip cookies.

While the cookies were in the oven, Alex was licking the remaining cookie dough out of the bowl. I alternated between laughing and feeling disgusted by what my recipe had done!

I have to admit these cookies were a huge hit: my dad, my boyfriend, and even my grandma approved! It’s your turn! 🙂

Ingredients

  • 1 cup butter
  • 1 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 3/4 cup (about 8 slices) bacon, cooked and chopped
  • 1/2 cup dark chocolate chips (or more, to taste)
For the dry ingredients
  • 2 1/2 cups rolled oats
  • 1 cup flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda

Steps

  1. Preheat the oven to 350ËšF. Line a large baking sheet with parchment paper. Set aside.
  2. In a bowl, combine all the dry ingredients. Set aside.
  3. Using a hand mixer, cream the butter and brown sugar in another bowl for 2 minutes or until smooth. Add the egg and vanilla extract and stir until smooth.
  4. Add the dry ingredients and mix using a wooden spoon. Add the bacon and chocolate chips.
  5. Shape the mixture into 12 dough balls (see tip) and arrange them on the baking sheet. Gently press them with your fingertips and bake for 20 minutes or until the edges of the cookies are golden. Let cool completely before serving.

Tips & tricks

To make the cookies uniform, I use a 1/4-cup ice cream scoop. Bonus: my fingers stay clean!
