Ingredients

Soup
  • 4 cups of english cucumbers, diced
  • 1 cup of baby spinach
  • 1 green apple, cut in pieces
  • 1 avocado, sliced and peeled
  • 1 lemon’s zest and juice
  • 1 1/4 cup of water
  • 1/4 cup of fresh dill, chopped
  • 1/4 cup of fresh parsley
  • 2 tablespoons of olive oil
  • Salt & pepper, as preferred
Garnish
  • 1/4 cup of cucumbers, diced
  • 1/2 a green apple, diced
  • A few fresh dill twigs
  • A few fresh basil leaves, shredded
  • A drizzle of olive oil
  • Salt & pepper, as preferred

Steps

  1. Blend all the soup ingredients together until smooth. Season generously then set aside.
  2. Combine all garnish ingredients in a bowl then serve with the soup.
