Ingredients

  • 1 cup of millet
  • 2 cups of water
  • 1/2 cup of dried olives
  • 1 cup of cooked chicken, minced
  • 1/3 cup of dried grapes
  • 2 radishes, minced
  • 1 cup of zucchinis, shredded
  • 2 tablespoons of sesame seeds
Sauce
  • 2 tablespoons of tahini
  • 1 lime’s juice
  • 2 tablespoons of water
  • 1/4 teaspoon of curry powder
  • 2 teaspoons of honey
  • Salt & pepper, as preferred

Steps

  1. Rinse the millet properly, then add to a pot with the water in it. Bring to a boil then cover and simmer over low heat for 18 minutes. Remove from the heat and set aside for 5 minutes.
  2. Whisk the sauce ingredients together, then set aside.
  3. Pour the millet into bowls, then top with olives, chicken, grapes, radishes and zucchinis.
  4. Drizzle with sauce and top with sesame seeds.

Tips & tricks

Can be frozen.
