Ingredients

  • 1 tablespoon butter
  • 4 hamburger buns
  • 1 lb ground chicken
    Replacement options

    or beef or veal

  • 8 oz white mushrooms, sliced
  • 1 clove garlic, minced
  • 2 green onions, sliced
  • Juice of 1 lime
  • 1 handful fresh parsley, chopped

  • 1/2 cup bread crumbs (I use panko)
  • Salt and pepper, to taste
For the caramelized onions
  • 1 tablespoon butter
  • 2 onions, sliced
  • 1 tablespoon white balsamic vinegar
  • 1 tablespoon honey or maple syrup
  • Salt and pepper, to taste

Steps

  1. Melt the butter in a pan and caramelize the onion over medium-high heat for 10 minutes. When the onion is nicely browned, add the honey and balsamic vinegar. Lower heat and reduce for 15 minutes. Set aside.
  2. In a large pan, melt the butter and brown the mushrooms until nicely golden (see tip). Season well.
  3. Place the mushrooms and remaining ingredients in a bowl. Season well.
  4. Shape into 4 patties and cook on the grill or in a pan.
  5. Serve on a hamburger bun with the caramelized onions.
