Chicken burger with mushrooms & caramelized red onions

Ingredients
- 1 tablespoon butter
- 4 hamburger buns
- 1 lb ground chicken
Replacement optionsor beef or veal
- 8 oz white mushrooms, sliced
- 1 clove garlic, minced
- 2 green onions, sliced
- Juice of 1 lime
- 1 handful fresh parsley, chopped
Replacement optionsor cilantro
- 1/2 cup bread crumbs (I use panko)
- Salt and pepper, to taste
For the caramelized onions
- 1 tablespoon butter
- 2 onions, sliced
- 1 tablespoon white balsamic vinegar
- 1 tablespoon honey or maple syrup
- Salt and pepper, to taste
Steps
- Melt the butter in a pan and caramelize the onion over medium-high heat for 10 minutes. When the onion is nicely browned, add the honey and balsamic vinegar. Lower heat and reduce for 15 minutes. Set aside.
- In a large pan, melt the butter and brown the mushrooms until nicely golden (see tip). Season well.
- Place the mushrooms and remaining ingredients in a bowl. Season well.
- Shape into 4 patties and cook on the grill or in a pan.
- Serve on a hamburger bun with the caramelized onions.
