Ingredients

  • 3/4 cup (150 g) of dark chocolate chips or pieces
  • 1/2 cup of vegetable oil
  • 1/2 cup of unsweetened coconut shreds
  • 3/4 cup of sugar
  • 2 beaten eggs
  • 2 teaspoons of red curry paste
  • 2/3 cup of all-purpose flour

Steps

  1. Preheat the oven to 350°F. Grease a 9” square pan and set aside.
  2. Melt the dark chocolate in a double-boiler or the microwave.
  3. Add the remaining ingredients, making sure the last one in is the flour. Stir until well-combined, then pour into the pan.
  4. Bake for 30 minutes. Let cool entirely before removing from the pan.
