Since Mother Nature has finally given me the opportunity to suggest a refreshing dish, here’s my healthy and invigorating gazpacho recipe.

You could replace the vegetable broth with water and serve it with crostini. Voilà!

Ingredients

  • 2 cucumbers, peeled
  • 1/2 cup water
  • 1/2 small red onion
  • 1 avocado
  • Juice of 1 lime
  • 1/2 cup plain yogurt
  • 4 mint leaves
    Replacement options

    or other herb of your choice

  • Handful of fresh cilantro

  • 3.5 oz feta cheese, crumbled
  • Salt and pepper, to taste

Steps

  1. Place all the ingredients in a food processor and process until smooth. Add water if necessary.
  2. Season generously and serve with feta cheese.

Tips & tricks

You can add maple syrup for a sweet twist, or Tabasco sauce to give it a little kick, if you wish.
