Strawberries are often used in dessert recipes. Even though I was much more inspired by the challenge of working them into my savoury recipes (see note below), I wanted to make them the highlight of a sweet creation.

I racked my brains to find a good way to do it, and realized that the strawberries were good on their own. If it ain’t broke, don’t fix it. So here’s a classic crumble with fresh strawberry and maple syrup compote.

The hardest part is waiting 40 minutes for the crumble to bake before trying it. Imagine how good it would be with a scoop of ice cream!

Ingredients

  • 1 lb fresh or frozen strawberries, hulled and cut into quarters
  • 3 tablespoons sugar
  • 1 tablespoon maple syrup
  • Pinch of salt
  • Generous pinch of ground cinnamon
For the crumble
  • 1/2 cup butter, melted
  • 1/2 cup rolled oats
  • 1/2 cup flour
  • 1/2 cup brown sugar

Steps

  1. Preheat the oven to 350˚F.
  2. In a bowl, combine the strawberries, sugar, maple syrup, salt, and cinnamon. Set aside.
  3. In a bowl, combine all the crumble ingredients. Set aside.
  4. Pour the strawberry mixture into an oven-safe dish and top with the crumble.
  5. Bake for 40 minutes or until the crumble is golden brown and the filling is bubbling beautifully.
