Niçoise quinoa salad

Ingredients
Salad
- 1/2 cup of cooked quinoa
- 1/2 a can of tuna
- 1 hard boiled egg, diced
- 1/2 cup of green beans, blanched and chopped
- 1/2 cup of cherry tomatoes, quartered
- 1/4 cup of Kalamata olives, pitted
- 1/4 cup of crumbled feta cheese
- Salt & pepper, as preferred
Vinaigrette
- 1 tablespoon of olive oil
- 2 tablespoons of vegetable oil
- 1 tablespoon of sherry vinegar
- 1 teaspoon of Dijon mustard
- 1 tablespoon of fresh tarragon, chopped
- 1 tablespoon of fresh basil, chopped
Steps
- Combine all salad ingredients in a bowl. Set aside.
- Mix all the vinaigrette ingredients in a small bowl, then pour onto the salad. Mix the vinaigrette over it all, then serve.
