Ingredients

  • 2 tablespoons of vegetable oil
  • ½ a red onion (1 cup), chopped
  • 2 celery branches (1 cup), chopped
  • 1 garlic clove, chopped
  • 1/2 cup of sugar (or of maple syrup)
  • 1/2 cup of vinegar
  • 1/2 cup of water
  • 2 cups of fresh or frozen cranberries
  • 1/2 cup of dried cranberries
  • Sal & pepper, as preferred

Steps

  1. Heat the vegetable oil over medium heat in a large pot, then brown the onion, celery and garlic for 10 minutes or until the vegetables soften.
  2. Add the remaining ingredients then cook over medium heat until the liquids are entirely reduced, and the chutney thickens (approx. 30 minutes.) Let cool in the refrigerator for 30 minutes before you enjoy.
