Clafoutis is a French cake made with a layer of berries covered with flan batter.

Clafoutis is traditionally made with cherries, but can also be made with raspberries, apricots, strawberries, blackberries, apples, or any other type of small fruit.

I’m not a huge fan of ice cream, but this dessert converted me: it’s delicious with vanilla ice cream.

Ingredients

  • Butter
  • 1 1/2 cup fresh raspberries
  • 2/3 cup sugar
  • 3 eggs
  • 1/2 cup plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 cup flour, sifted
  • 3/4 cup 35% cream

Steps

  1. Preheat the oven to 350˚F. Grease a 10-inch baking pan and pour in the raspberries. Set aside.
  2. In a bowl, whip the sugar, eggs, yogurt, and vanilla extract using a whisk.
  3. Add the flour, whisking constantly to prevent lumps.
  4. Add the cream and mix well. Pour over the raspberries so they are completely covered.
  5. Bake for 40 minutes. Let cool completely and serve.
