Rhubarb, apple & white chocolate crumble

  • 1/4 cup of brown sugar
  • 1/4 teaspoon of nutmeg
  • 3 tablespoons of corn starch
  • 3 cups of rhubarb, sliced in 1 cm thick pieces
  • 1 1/2 cup of apples, diced
  • 1/2 cup of white chocolate, chopped
  • 1/4 cup of brown sugar
  • 1/2 cup of oatmeal
  • 1/2 cup of hazelnuts
  • 1/2 cup of cold butter, diced


  1. Preheat the oven at 350°F and place the rack at the center of it.
  2. Lightly blend all the crumble ingredients together in a blender until you get large crumbs. Set aside.
  3. Mix the brown sugar, nutmeg and corn starch together in a bowl. Add the rhubarb and the apples and coat them equally. Pour into a 9” mould (either round or square) then cover with white chocolate and crumble.
  4. Bake in the oven for 35 minutes, or until the crumble is golden. Serve warm with vanilla  ice cream or fresh cream.
