Chicken breasts with Swiss chard & goat cheese sauce

Ingredients
- 1 tablespoon of butter
- 2 Exceldor chicken breasts
- Salt & pepper, as preferred
- 2 shallots, minced
- 2 garlic cloves, chopped
- 2 chopped anchovies
- 2 tablespoons of all-purpose flour
- 1 cup of chicken broth
- 100 g of goat cheese
- 1/2 cup of 35% cream
- 5 cups of swiss chard, minced
- 7-8 of fresh basil leaves, chopped
Steps
- Preheat the oven to 350°F and place the rack at the centre of it.
- Melt the butter over high heat in a large pan then sear the Exceldor chicken breasts for 2 minutes on each side. Season.
- Remove the chicken from the pan, lay them into an oven-safe pot. Reduce the heat to medium.
- Brown the shallots, garlic and anchovies for 3 to 4 minutes. Add the flour and stir.
- Pour the chicken broth, goat cheese and cream. Stir until the mix is nice and creamy.
- Add the Swiss chards and cook for 2 to 3 minutes. Season and pour the sauce onto the chicken breasts.
- Bake in the oven for 30 minutes.
- Add the basil when the baking is done, check the seasoning if needed and then serve.
