Mini-turkey meatloaves
Watch the videoAll throughout my childhood, I ate traditional meatloaf made with ground beef. Since I’ve decided to limit my consumption of red meat, I wanted a way to reinvent meatloaf without changing it too much. I decided to make it with turkey and serve it in individual portions.

Ingredients
- 8-16 slices prosciutto
- Dash of olive oil
- 1 cup yellow onion, finely chopped
- 2 tablespoons tomato paste
- 1 tablespoon honey
- Salt and pepper, to taste
- 16 oz ground turkey
- 1/4 cup plain Greek yogurt
- 1/2 cup old cheddar cheese, grated
- 1 egg, lightly beaten
Steps
- Preheat oven to 400°F. Line 8 muffin cups with prosciutto slices. Set aside.
- In a pan, heat a dash of olive oil and soften the onion for 5 minutes or until translucent. Add the tomato paste, honey and season. Cook for 2 more minutes.
- Transfer the onion to a large bowl and add the remaining ingredients. Season generously and mix well.
- Pour the mixture into the muffin cups and bake for 30 minutes.
