QUICK TANDOORI CHICKEN

I hesitated to share this tandoori chicken recipe because it’s kind of a dollar store version. In other words, it’s pretty basic, but it does the trick. 

With five ingredients and a handful of change, you’ll be able to make a great dinner in less than 30 minutes. I like to serve this with basmati rice and a salad.

Ingredients

  • 4 chicken breasts, cubed
  • 2 tablespoons tandoori powder (see tip below)
  • Juice and zest of 1 lime
  • 1 cup Oikos plain Greek yogurt
  • Dash of olive oil
  • Rice, as a side

Steps

  1. In a bowl, combine all the ingredients and marinate for 2–12 hours in the fridge.
  2. Preheat the oven to 375°F. Place the chicken on a baking sheet lined with parchment paper. Bake for 25 minutes and enjoy with the side of your choosing. 
  3. You can also grill the chicken on the barbecue.

Tips & tricks

Tandoori is a spice mix that can be found ready-made in specialty stores, or some of the larger supermarkets. If you want to take a stab at homemade tandoori mix, follow this recipe that I found in a monthly magazine. Many thanks to them for sharing:

1 tsp ground ginger
1 tsp ground cumin
1 tsp ground coriander
1 tsp paprika
1 tsp turmeric
1 tsp salt
1 tsp cayenne pepper
