Quick & easy date squares

A few days ago, I was really craving a date square but didn’t want to be stuck with leftovers all week. I tried to concoct a single portion in less than 15 minutes and it worked (aside from the fact that I burned my first batch of crumble).
The date compote is also super delicious warmed up and served over Greek yogurt or granola.

Ingredients
For the dates
- 1 cup Medjool dates
- 3/4 cup water
- 1/4 teaspoon baking soda
- 1 teaspoon lemon juice
For the crumble
- 1/4 cup butter, melted
- 1/4 cup brown sugar
- 1/4 cup rolled oats
- 1/4 cup flour
Steps
- Preheat the oven to 325˚F. Line a baking sheet with parchment paper. Set aside.
- In a bowl, combine all the crumble ingredients. Spread on the baking sheet and bake for 10 minutes, stirring every so often.
- Meanwhile, place all the date ingredients in a saucepan and bring to a boil. Reduce heat and let simmer for 8 minutes. Stir vigorously until the dates melt and the texture resembles compote.
- Put a little crumble into a bowl, top with dates, and cover with more crumble. Serve as-is or with a scoop of ice cream.
