Oven roasted chicken breasts, potatoes, fennel & onions

Ingredients

  • 2 chicken breasts
  • Salt & pepper, as preferred
Crust
  • 1/2 cup of mayonnaise
  • 2 tablespoons of Dijon mustard
  • 1 teaspoon of smoked paprika
  • 1/2 cup of panko breadcrumbs
  • 1/2 cup of fresh parmesan, shredded
  • 1 tablespoon of fresh oregano, chopped
Vegetables
  • 5 yellow skin potatoes, diced
  • 1 fennel bulb, minced
  • 1 small onion, minced
  • 2 tablespoons of olive oil
  • Salt & pepper, as preferred

Steps

  1. Preheat the oven at 400°F.
  2. Slice the chicken breast width length for smaller pieces. Season the chicken and lay it out onto a baking sheet.
  3. Combine all crust ingredients in a bowl, then baste the chicken breasts with the mix.
  4. In another bowl, combine all vegetable ingredients, then add them onto the baking sheet and bake for 30 minutes.
  5. Finish baking on broil to give your meal a nice golden colour. Serve.
