Ingredients

  • 4 (200 g each) haddock filets
Crust
  • 3/4 cup of panko breadcrumbs
  • 1/4 cup Kalamata olives, pitted and finely sliced
  • 1/4 teaspoon of garlic powder
  • 1/4 cup of fresh mint leaves, chopped
  • ½ a lemon’s zest
  • 1/4 cup of mayonnaise
  • 1 teaspoon of Sriracha sauce (or any other spicy sauce)
  • Salt & pepper, as preferred

Steps

  1. Preheat the oven at 400°F and place the rack at the center of it. Line a baking sheet with parchment paper, then set aside.

  2. Mix all the « en croûte » ingredients in a bowl then pour over the haddock filets.

  3. Lay the haddock onto a baking sheet then bake for 8 to 10 minutes depending on the fish’s thickness. Quickly grill the fish to give the crust a nice golden color. 

  4. Serve on pilaf rice.
