Tartare & Pizza

Ingredients
- 1 pizza dough
Tartare
- 250g of very fresh salmon
- 50g of smoked salmon
- 3 tablespoons of plain yogurt
- 1 teaspoon of Dijon mustard
- 1/2 a lemon’s juice
- 2 tablespoons of minced shallot
- 1/2 teaspoon of Sambal Oelek
- Salt & pepper, as preferred
Garnish
- 1/4 cup of olive oil
- 2 tablespoons of lemon juice
- 1/2 cup of chopped red onions
- 2 tablespoons of fresh dill, chopped
- 2 tablespoons of chopped chervil (or parsley)
- 1 tablespoon of chopped capers
- Salt & pepper, as preferred
Steps
- Chop the fresh salmon and smoked salmon with a knife, as small as possible.
- Combine all the Tartare ingredients in a bowl then refrigerate.
- Spread the pizza dough to form a 9 x 13” rectangle. Lay the dough onto a previously greased pan.
- Mix all the garnish ingredients then spread evenly onto the dough.
- Bake in the center of the oven at 450 °F for 15 minutes if the dough isn’t already baked, or at 400 °F for 8 minutes if it is.
- Cut the pizza in strips to serve with the salmon tartare.
Tips & tricks
The pizza can be frozen.
