Here is a quick recipe that, depending on presentation, can be served at a casual get-together or a fancy event.

I also like making this recipe into bites, by cutting the salmon into cubes and dividing the crust accordingly; the baking time is way shorter, and they’re just as delicious.

I guarantee these salmon bites will fly off the serving tray!

Ingredients

  • 4 salmon fillets, skin removed
For the crust
  • 1/4 cup butter, at room temperature
  • 4 green onions, minced
  • 3 tablespoons plain breadcrumbs (I like panko)
  • 1 teaspoon honey
  • 2 teaspoons sriracha
  • Juice of 1/2 lemon
  • 1 teaspoon David’s Tea gingerbread tea (optional)
  • Salt and pepper, to taste

Steps

  1. Preheat the oven to 400˚F.
  2. In a bowl, mix all the ingredients with a fork.
  3. Coat the fillets with the spice mixture and bake for 8–10 minutes, depending on the thickness of the fish.
  4. Finish cooking by briefly broiling the fish until the crust is golden.
  5. Serve on a bed of baby spinach with your favourite vinaigrette.
