Maple & shredded chicken baked beans

Can we all agree that baked beans are good year-round? This recipe is made in the slow cooker and really enhances the taste of Quebec’s pride and joy: maple syrup.

Ingredients
- 2 cups dried white beans
- 1 onion, finely chopped
- 6 chicken thighs, skinless and boneless
- 4 slices bacon, minced
- 1 cup ketchup
- 1/2 cup maple syrup
- 1/2 cup molasses
- 1/4 cup cider vinegar
- 2 cups water
- 2 teaspoons powdered mustard
- 2 teaspoons salt
- 1 teaspoon pepper
Steps
- Soak the beans in 8 cups of water and refrigerate overnight.
- Drain and pour into slow cooker. Add all the remaining ingredients. Stir well.
- Cover and cook over high heat for 8 hours. Stir every so often. You’ll notice that the chicken pretty much shreds itself.
