Can we all agree that baked beans are good year-round? This recipe is made in the slow cooker and really enhances the taste of Quebec’s pride and joy: maple syrup.

Ingredients

  • 2 cups dried white beans
  • 1 onion, finely chopped
  • 6 chicken thighs, skinless and boneless
  • 4 slices bacon, minced
  • 1 cup ketchup
  • 1/2 cup maple syrup
  • 1/2 cup molasses
  • 1/4 cup cider vinegar
  • 2 cups water
  • 2 teaspoons powdered mustard
  • 2 teaspoons salt
  • 1 teaspoon pepper

Steps

  1. Soak the beans in 8 cups of water and refrigerate overnight.
  2. Drain and pour into slow cooker. Add all the remaining ingredients. Stir well.
  3. Cover and cook over high heat for 8 hours. Stir every so often. You’ll notice that the chicken pretty much shreds itself.
