Fresh cucumber soup with green apples, avocados & garden herbs

Ingredients
Soup
- 4 cups of english cucumbers, diced
- 1 cup of baby spinach
- 1 green apple, cut in pieces
- 1 avocado, sliced and peeled
- 1 lemon’s zest and juice
- 1 1/4 cup of water
- 1/4 cup of fresh dill, chopped
- 1/4 cup of fresh parsley
- 2 tablespoons of olive oil
- Salt & pepper, as preferred
Garnish
- 1/4 cup of cucumbers, diced
- 1/2 a green apple, diced
- A few fresh dill twigs
- A few fresh basil leaves, shredded
- A drizzle of olive oil
- Salt & pepper, as preferred
Steps
- Blend all the soup ingredients together until smooth. Season generously then set aside.
- Combine all garnish ingredients in a bowl then serve with the soup.
