Apple crisp & frozen yogurt breakfast

I don’t know about you, but I love eating dessert for breakfast, even though it makes me feel unhealthy for the rest of the day.
This recipe, courtesy of my friend Jannie, is a dream come true: I can finally have dessert for breakfast AND feel healthy—the best of both worlds!
It’s an excellent option for kids who don’t like eating in the morning and also a great way to cook your favourite fresh fruits.

Ingredients
For the topping
- 3 cups raspberries
- 2 cups apples, diced
- 3 tablespoons maple syrup
- 3 tablespoons chia seeds
For the crumble
- 1 egg
- 1/3 cup coconut oil
- 1/4 cup maple syrup
- 1 tablespoon vanilla extract
- 2 1/2 cups rolled oats
- 1 1/2 cup flour
- 1/2 teaspoon baking powder
- Pinch of salt
- 2 tablespoons sugar
- 1 tablespoon butter, melted
For the frozen yogurt
- 2 cups frozen raspberries
- 1 cup Oikos vanilla Greek yogurt
- 1/2 cup maple syrup
Steps
- Preheat the oven to 350˚F.
- In a bowl, combine all the topping ingredients. Set aside.
- In another bowl, combine all the crumble ingredients. Pour half of the crumble mix into an oven-safe dish. Pour the topping mix over the crumble and top with leftover crumble.
- Bake for 25 minutes.
- Meanwhile, blend all the frozen yogurt ingredients in an electric mixer and pulse for 5 minutes or until smooth. Serve with crumble.
