Apple crisp & frozen yogurt breakfast

I don’t know about you, but I love eating dessert for breakfast, even though it makes me feel unhealthy for the rest of the day.

This recipe, courtesy of my friend Jannie, is a dream come true: I can finally have dessert for breakfast AND feel healthy—the best of both worlds! 

It’s an excellent option for kids who don’t like eating in the morning and also a great way to cook your favourite fresh fruits.

Ingredients

For the topping
  • 3 cups raspberries
  • 2 cups apples, diced
  • 3 tablespoons maple syrup
  • 3 tablespoons chia seeds
For the crumble
  • 1 egg
  • 1/3 cup coconut oil
  • 1/4 cup maple syrup
  • 1 tablespoon vanilla extract
  • 2 1/2 cups rolled oats
  • 1 1/2 cup flour
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • 2 tablespoons sugar
  • 1 tablespoon butter, melted
For the frozen yogurt
  • 2 cups frozen raspberries
  • 1 cup Oikos vanilla Greek yogurt
  • 1/2 cup maple syrup

Steps

  1. Preheat the oven to 350˚F.
  2. In a bowl, combine all the topping ingredients. Set aside.
  3. In another bowl, combine all the crumble ingredients. Pour half of the crumble mix into an oven-safe dish. Pour the topping mix over the crumble and top with leftover crumble.
  4. Bake for 25 minutes.
  5. Meanwhile, blend all the frozen yogurt ingredients in an electric mixer and pulse for 5 minutes or until smooth. Serve with crumble.
