People who know a little bit about me know that I love raw recipes. They limit how much the ingredients are altered and reduce the number of steps in a recipe.

Coffee lovers will absolutely ADORE these bars that can easily replace an afternoon coffee.

Ingredients

  • 1 box (600 g) vanilla cookies (like Dare’s Village®)
  • 1 cup strong coffee, brewed (liquid)
  • 1/4 cup cocoa powder
  • 1/4 cup butter, melted
  • 2 cups icing sugar
  • 1 tablespoon vanilla extract
  • 1/2 cup nuts, finely chopped
  • Pinch of salt

Steps

  1. Line a 10-inch square baking dish with parchment paper. Set aside.
  2. In a food processor, grind the cookies into crumbs. Set aside.
  3. Pour the coffee into a bowl and mix in the cocoa powder. Let cool completely.
  4. Add the remaining ingredients and mix well.
  5. Pour into the dish and let cool for 2 hours.
  6.  Cut into squares and serve with fruit or melted white chocolate.
