COLD CHOCOLATE & COFFEE CHEWY BARS (RAW)
People who know a little bit about me know that I love raw recipes. They limit how much the ingredients are altered and reduce the number of steps in a recipe.
Coffee lovers will absolutely ADORE these bars that can easily replace an afternoon coffee.

Ingredients
- 1 box (600 g) vanilla cookies (like Dare’s Village®)
- 1 cup strong coffee, brewed (liquid)
- 1/4 cup cocoa powder
- 1/4 cup butter, melted
- 2 cups icing sugar
- 1 tablespoon vanilla extract
- 1/2 cup nuts, finely chopped
- Pinch of salt
Steps
- Line a 10-inch square baking dish with parchment paper. Set aside.
- In a food processor, grind the cookies into crumbs. Set aside.
- Pour the coffee into a bowl and mix in the cocoa powder. Let cool completely.
- Add the remaining ingredients and mix well.
- Pour into the dish and let cool for 2 hours.
- Cut into squares and serve with fruit or melted white chocolate.
