  • Serves6 - 8 pops, depending on the size of your popsicle tray
  • Prep time15 mins
  • Cook time10 mins
  • Timeout4 hours 30 mins
  • FreezingFreezes well

Ingredients

Rhubarb mix
  • 1/4 cup of sugar
  • 1/4 cup of water
  • 1 cup of peeled and minced rhubarb
  • 1/2 cup of vanilla yogurt
Strawberry mix
  • 1 cup of fresh strawberries, stemmed
  • 1/2 cup of vanilla yogurt

Steps

  1. Combine the sugar, water and rhubarb in a pot. Cover and simmer over low heat for 10 minutes. Remove from heat and let cool in the refrigerator for minimum 30 minutes.
  2. Add the yogurt to the rhubarb mix then blend with a handheld mixer. Set aside.
  3. Blend all the ingredients for the strawberry mix in another container.
  4. Pour both mixes alternately into a popsicle tray, thus creating marbled popsicles. Add the sticks in the middle, then freeze for 4 to 6 hours. Remove from tray then serve.
