I’d like to dedicate this post to my mom.

When I was a child, I used to say you were the “Egg Salad Queen”. You often prepared it for me and I would request it again and again. I don’t know what your secret was, but my sandwiches were always more appetizing than my classmates’, and I would strut around the cafeteria, my chest puffed out with pride, even though I was only a tiny pipsqueak.

Recently, when you had chemotherapy, I revisited those memories. During that period, when our roles reversed and I was the one taking care of you, I thought it was wonderful that you asked me to make you egg salad sandwiches so we could eat them together at the hospital.

While assembling the recipe on the nights before your treatments, I thought of all those times you made the effort to cook my lunches, probably telling yourself how much you loved me.

Once inside the hospital, watching you eat your sandwich between two injections, I held back tears of joy. It felt good to return the favour and hear you say that it was my turn to be the “Egg Salad Queen”.

  • 8 eggs
  • 1/4 cup store-bought mayonnaise
  • 1 tablespoon chives, finely chopped
  • 1 teaspoon relish
  • 1 teaspoon sriracha sauce, to taste
  • 4 slices country-style bread
  • 1 teaspoon vinegar (optional)
  • Salt and pepper, to taste


  1. Place the eggs in a pot and cover with cold water. Add the vinegar. (This prevents the eggs from running, if ever one should break. Egg white hardens immediately, as soon as it comes into contact with the vinegar, which also prevents leaks from spreading.) 
  2. Bring to a boil over high heat. Remove from heat after 10 minutes. 
  3. Place eggs in a large bowl of cold water. Peel.
  4. Remove the eggs from the water and cut into cubes. Transfer to a salad bowl. 
  5. Add the remaining ingredients and mix well.
  6. Garnish a slice of country-style bread with egg salad. Enjoy.
