Customizable creamy chicken salad (for sandwiches)

Because I married the world’s biggest chicken-eater, I have to be creative when I make chicken salad sandwiches. Let’s just say they can get boring pretty fast. After trying a million different variations on the theme, I realized that it’s best not to mess with a classic. 

Here’s my classic chicken salad recipe (I replaced half the mayonnaise with Greek yogurt for a lighter version) and ideas for additional ingredients to customize the recipe to your liking.

For the salad
  • 1 1/2 cup cooked and chilled chicken, diced
  • 4-5 sprigs chives, finely chopped
  • 3 tablespoons plain Greek yogurt
  • 3 tablespoons mayonnaise
  • Salt and pepper, to taste
Other ingredient ideas
  • Parmesan or feta cheese, crumbled
  • or
  • 1 tablespoon curry powder
  • or
  • 1/2 apple, diced
  • or
  • 1/4 cup fresh cilantro, chopped & 1/2 Asian pear, diced


  1. In a bowl, combine the salad ingredients. Add the topping(s) of your choice, if you wish.
  2. Serve on the bread of your choice with a lettuce leaf, or on a green salad.
