You’ve probably noticed that December has been inspiring me to make more rich and traditional recipes. It’s probably because the cold weather makes me crave meals that warm up my insides. 

I polled my close friends and decided to create a hot turkey sandwich recipe. I had no idea what I was getting myself into…

To give you an idea, here’s a list of the contradictory advice I got from my (difficult) friends: 

“Make it with peas. “

“Without peas, Marilou, or I’ll never talk to you again. “

“Find a way to keep the bread from soaking through after two minutes. “

“Find a good sauce recipe that soaks into the bread like it’s supposed to. “

“If your recipe calls for a can of St-Hubert sauce, I’m in! “

So basically, I knew from the start that I wouldn’t be able to make everyone happy. But I tried to come up with a simple recipe you can modify to your liking. 🙂

Ingredients

  • 8 slices white bread
    Replacement options

    or ciabatta, for a fancier version

  • 4 cups turkey, cooked and diced (see tip)
For the peas
  • 1 can peas
  • 1 tablespoon chives, finely chopped
  • 1 tablespoon fresh parsley, chopped
  • 1/2 tablespoon tarragon, finely chopped
  • Salt and pepper, to taste
For the sauce
  • 5 tablespoons butter
  • 1 cup onion, finely chopped
  • 1 clove garlic, minced
  • 5 tablespoons all-purpose flour
  • 1 teaspoon powdered mustard
  • 2 tablespoons HP sauce
  • 2 1/2 cups beef broth

    or veal broth

  • 1/2 tablespoon ketchup
  • Salt and pepper, to taste

Steps

  1. In a pot, soften the onion in the butter for 3–4 minutes and add the garlic.
  2. Add the flour and stir with a wooden spoon for a few minutes.
  3. Add the mustard, HP sauce, broth, and ketchup and mix well. Simmer for 20–25 minutes, whisking regularly.
  4. Blend the sauce in a blender until smooth. Adjust the seasoning and set aside.
  5. In a bowl, combine all the peas ingredients and season well. Set aside.
  6. When it’s time to serve, make sure everything is hot (turkey, peas, and sauce) and assemble the sandwich in that order: a slice of bread, some meat and peas, a bit of sauce, another slice of bread, more peas, and more sauce.

Tips & tricks

OTHER MEAT IDEAS:

I use Exceldor Freezer to Oven Turkey, but feel free to get creative with the type of meat you use. Change things up by using duck confit or braised meats.
