Sweet potatoe chips & Bacon Raïta sauce

Raïta sauce is an Indian specialty. There are cucumbers and yogurt in it which gives it a fresh taste. It’s actually quite similar to a greek Tzatziki sauce. I’m pretty sure you’ll be making more of this to eat with other meals. 🙂

Ingredients

Chips
  • 1 sweet potato, peeled and sliced (see tips for details)
  • A drizzle of olive oil
  • Salt & pepper, as preferred
Sauce
  • 1 Lebanese cucumber
  • 1/2 cup of plain yogurt
  • 2 tablespoons of bacon, cooked and chopped (4 to 5 slices)
  • A pinch of chili powder (optional)
    Replacement options

    Cayenne pepper

  • Salt & pepper, as preferred

Steps

Chips
  1. Preheat the oven to 350°F and place the rack at the center of it. Line 2 baking sheets with parchment paper then set aside.
  2. Mix the olive oil and sweet potatoes in a bowl. Make sure each slice is coated then season and lay onto the baking sheet in one layer. Bake in the oven for an hour while stirring occasionally. The slices will shrink while becoming chips, it’s normal.
  3. Remove from the oven and let cool for 15 minutes.
Sauce
  1. Grate the cucumber and squish between your hands over the sink to remove the maximum amount of water from them.
  2. Combine all the sauce ingredients in a bowl (including the cucumbers), then serve with chips.

Tips & tricks

The sweet potato must be sliced thinly, a mandolin or a potato peeler will work wonders.

Use as many baking sheets as necessary.
