LYCHEE, KIWI & COCONUT YOGURT SMOOTHIE
The other day, I came across golden kiwis at the store and couldn’t stop eating them for the rest of the day. They’re addictive. I can eat a bag of 9 kiwis a day—seriously—and I have to stop myself from eating more.
So, I’ve concocted a lychee and coconut yogurt smoothie inspired by these kiwis that are taking over my life (and the stores). It’s pure deliciousness.
Lychees (which I buy canned) have a really distinctive taste that grosses some people out. Personally, I like eating a few plain with other fruit and using the rest in recipes, like this smoothie. It adds a little something that reminds you of summer, even in mid-November.

- 1 cup coconut yogurt (I buy Activia)
- 6 canned lychees, drained
- 3 kiwis, peeled
- 1 teaspoon honey
- In a food processor, process the all the ingredients until smooth.
