Quick and easy peach, yogurt & almond compote
A few days ago, I posted an article about basic kitchen ingredients, which gave me the idea to pick something for this week’s theme that most people already have on hand: yogurt.
I had a few quick and easy ideas for yogurt-based snacks, meals, or recipes made to serve with yogurt.
I never thought it’d happen, but I’m getting sick of my morning bowl of yogurt with fresh fruit and granola. Recently, though, I started making quick and easy compotes and they turned out to be amazing.

Ingredients
For the compote
- 3 tablespoons butter
- 3 cups peaches, finely diced (with or without peel, depending on desired texture)
- 3 tablespoons maple syrup
- Juice of 1/2 lemon
- Generous pinch of cinnamon
For serving
- Oikos vanilla Greek yogurt
- Almonds, finely chopped
Steps
- Put all the compote ingredients in a pan. Simmer for 15 minutes. Let cool.
- Pour the yogurt into a bowl. Top with warm compote and almonds. Enjoy!
